So your toddler is growing up and is eating a variety of different foods? Well this is the time to get them involved in the preparation of their own food. These easy kids recipes are a great way to get started.

Easy breakfast recipes

Oatmeal Waffles
In our home I triple this recipe and then freeze the left over waffles. There is nothing to compare with them fresh though, but a frozen stock is good to have!

1 egg
1 and 1/2 cups oat bran
1 teaspoon baking powder
1 tablespoon brown sugar
3/4 cup of milk
4 tablespoons of melted butter

Beat egg white until stiff. Mix together dry ingredients. Combine egg yolk, milk and butter. Add to dry ingredients. Add egg white, mix until just mixed. Cook in your waffle iron.

Toppings
Yoghurt
Sliced banana or strawberries (or any other seasonal fruit)
Maple syrup
Grated cheese

Flapjacks
3 cups flour
3 eggs
350ml milk
2tsp Baking Powder
Pinch salt
Butter

Mix dry ingredients. Add milk and eggs beating with a hand whisk. Melt butter in a flat pan and add half a ladle of mixture into the sizzling butter - you can fit about 3 flapjacks in a medium pan at a time. Keep warm until all are made. Serve with honey, lemon juice and cinnamon sugar or have them with savoury accompaniments like, grated cheese, fried mushrooms and tomatoes etc.

Breakfast cookies
1 c olive oil
1 c brown sugar or honey
2 eggs

Cream till fluffy.

1/2 c buttermilk
1 & 3/4 c whole wheat flour or wheat germ
1 tsp. bicarbonate of soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg

Then add:

3 c oats or barely flakes
1 c raisins
1/2 c walnuts chopped or almonds
Drop from Tbsp. or ice cream scoop 2" apart on lightly greased cookie sheet. Bake at 400F about 8 min.

30 Day Bran Muffins
Mix together:
4 eggs
175ml oil
500ml soft brown sugar
1L butter milk
Mix together
500ml Bran
250g raisins
Add to above:
750ml cake flour
500ml Whole-wheat flour
25ml bicarbonate of soda
5 ml salt
Add and mix thoroughly,

Spoon into greased muffin pan bake at 200, the remaining mixture will keep in the fridge for 30 days and you can have a ready mixed batter ready for unexpected guests and hungry children on demand. The batter makes about 48 muffins and is one of the easiset kids recipes about.
