Easy kids lunch recipes for your children to make with you to satisfy hungry tummies.


So your toddler is growing up and is eating a variety of different foods? Well this is the time to get them involved in the preparation of their own food. These kids lunch recipes are a great way to get started.

Savoury muffins

Basic muffin recipe:
1 cup plain flour
1 cup whole-wheat flour
2 teaspoons baking powder
1 teaspoon salt
3/4 cup milk
1/4 cup melted butter
2 eggs lightly beaten

Add to this one of the following combinations:

Chopped Salami/ham and grated cheese
Chopped spinach/grated zucchini and grated cheese
Use one can of cream style sweet corn to replace the milk.
Use some leftover mashed pumpkin in replace of 1/2 the milk. Add a teaspoon of cinnamon.


Cowboy beans on toast
2 slices of toast per person
6 sausages of your choice (Viennas work well)
1 can of baked beans in tomato sauce
1 red pepper, chopped
1 onion, chopped
Paprika
Salt and pepper
Grated cheese

Fry the onion and red pepper until soft. Add the beans and spices. Add the sausage and cook until warmed through.Serve onto toast and sprinkle with cheese.

French bread
2 slices of bread per person
4 eggs
1 cup of milk
Maple syrup
Grated cheese
Beat the eggs and milk together. Dip both sides of the bread into the egg mixture. Fry in a mixture of oil and butter until brown. Top with maple syrup and cheese. Or go savoury with tomato sauce and cheese.


Toasted sandwich variations
Toasted sandwich fillings:
Ham and cheese
Cheese and tomato
Sweet chutney, cheese and creamed sweet corn
Left over spaghetti mince
Chicken mayonnaise

Mini Pizzas
Make your own in bulk and freeze. Remove them as needed for lunches.

Pizza dough
250g bread flour
1teaspoon sugar
1 teaspoon active yeast
½ teaspoon salt
150ml warm water
1 tablespoon olive oil

Mix the dry ingredients together. Mix the liquids. Add to the dry ingredients and mix well. If the batter is too sticky add more flour, if to dry add more water.

Allow to rise somewhere warm. When risen turn out onto a floured surface. Roll out and cut out circles about the size of a saucer.

Pizza topping
Cover each pizza with tomato puree and dry oregano. Add either cooked crumbled bacon, pineapple chunks or sliced ham and then top with mozzarella cheese. Cook for 20 - 25 minutes on 180 deg Celsius.

PLEASE NOTE: If you are making in bulk, do not cook, but wrap the ones for freezing in cling wrap and put in the freezer immediately.
